Shrimp scampi is a deliciously decadent Mediterranean seafood dish whose origins seem to be lost to history. This rich, buttery treat is simple to prepare. Ingredients
1lb Pealed, Deveined Shrimp
6 Cloves garlic
1/4 cup finely chopped parsley
1/2 tsp red pepper flake
1 lemon juiced
1/2 Cup dry white wine
4 oz butter
1 lb pasta
Salt to taste
1/2 Lemon zest
Method
Pasta:
Set a pot with water (4 quarts for every pound of pasta) and bring it to a boil ensuring that you have enough water so that the pasta won’t stick together.
When the water comes to a boil add 2 Tbsp salt to the pot. Put in the pasta and bring the pot back to a boil. Cook pasta uncovered for no longer than the recommended time on the pasta package which is about 10 minutes. Stir occasionally to ensure that it doesn’t stick.
Shrimp scampi:
Slice shrimp in the center not so much that it separates. This helps with presentation and allows the shrimp to cook quicker. place this in a bowl and set aside.
Allow pan to be heated, add butter and let it melt.
Add the shrimp to the pan and cook for about three minutes. Remove the shrimp from the pan and set a side.
To the pan add the additional butter, chopped garlic, red pepper flakes, lemon juice and dry white wine. Return the shrimp to the pan and stir.
Check to see if the pasta is ready, drain and add it to the pan as well as the chopped parsley and lemon zest. Stir so that all the juices will blend into the pasta.
